Warm weather is always a good excuse to break out those mason jars and whip up some seriously delicious picnic food. My kids are very active and love to go to the park and play for hours at a time, when it comes to keeping them fed and happy I like to opt for easy to make foods. The typical culprits can be found in our picnic baskets, some fruit, juice, water, and bubbles. Yes, that’s right we keep bubbles in our picnic basket because Esuun loves to play with bubbles at the park.
This year Esuun and her best friends will be making their weekly debut to our local park for some fun girl time. I like to make sure that when we go we bring enough delicious food for not just the little ones to eat, but something for the mom’s too. I got a thumbs up from the mom’s and I’m super excited to share it with all of you. This recipe was already easy to make, but adding in the Barilla Ready Pasta made it ridiculously easier.
This recipe was actually introduced to me by my best friend who loves food as much as I do. One day for a potluck dinner we had at the house, she brought this amazing Mediterranean Pasta Salad that I just could not put down. I had about 2-3 servings that day and since then have to watch my portions or else I will eat the whole bowl in one sitting. There is something about the fresh crunch of the vegetables as well as the noodles and sauce.
The best thing about this recipe is it can be made in under 10 minutes flat! The cleanup is a breeze and it takes pasta salads to another level of easy hands down. - 1 Pouch of Barilla Ready Pasta
- 1 Green Pepper
- 3 Cloves of Garlic
- ½ Purple Onion
- 1 Cucumber
- 1 Package of Grape Tomatoes
- ⅛ Cup Balsamic Vinegar
- ⅛ Cup of Agave
- ⅛ Cup of Extra Virgin Olive Oil
- Fetta Cheese (for garnishing)
- Cook Barilla Ready Pasta as directed in Microwave. (set aside when finished)
- Mince your garlic.
- Dice your cucumber, green pepper and purple onion to desired sizes.
- Slice the Grape Tomatoes in half throw in the bowl with other ingredients.
- Pour in the Agave, balsamic vinegar, and extra virgin olive oil.
- If you wish you can add salt and pepper to taste (not required)
- Tear open the Barilla Ready Pasta and pour in the fully cooked pasta. Add desired amount of Fetta Cheese to the bowl.
- Toss together and then add to Mason Jars or a big serving bowl.
- Serve and Enjoy!

I absolutely love pasta salad. I’ve never tried to make mine with peppers though or these noodles. I’ve never seen those noodles before. When I make it next time, I’m going to have to try this recipe instead!

This Mediterranean Pasta Salad looks delicious and easy to make! I like making pasta salads as a side dish when my husband and I cookout. I think the Mediterranean Pasta Salad would be a nice edition to our cookouts.
